Directions to Prepare Brinjal Masala Curry Recipe:
Step 1: Firstly wash the brinjals and slit them diagonally
with the stalks intact and take bowl pour water add two tablespoons of rock
salt in that water and add slit brinjal in that salt water and set aside. Now
wash and chop the onion and green chilli into required size piec
es and set aside.
Step 2 :
Take a mixer add cashew nuts, poppy seeds, coriander seeds, green chilli,
coconut pieces and add required amount of salt as per taste grind it very well
together by adding very little amount of water and prepare thick and smooth paste
then transfer the prepared paste into a bowl and set aside.
Step 3:
Drop the chopped brinjals into the prepared paste and set aside.
Step 4:
Take a heavy bottomed vessel and pour oil, add pinch of turmeric powder,
chopped onion and green chilli fry it well in medium flame till it turns into golden
brown then set aside.
Step 5:
Now add ginger garlic paste fry until the raw aroma goes off.
Step 6:
Drop the brinjals fry it both sides till it gets light golden brown color.
Step 7:
Add red chili powder and add required amount of salt to taste and fry it for 2
minutes in medium flame.
Step 8:
Finally add chopped coriander and add water to them stir it well everything together till the curry
becomes thick gravy after that switch of the flame.
