Procedure to Make Brinjal with Coconut Curry Recipe:
Step 1: Firstly chop
the brinjal in medium size and set aside take a bowl pour water and required
amount of rock salt to it stir it very well together and then add chopped
brinjal pieces and set aside. Wash the ginger piece well and peel off the
ginger and chop them into medium size and set aside.
Step 2: Take a pan fry the dry chilli set aside in the
same pan add Bengal gram, coriander seeds and add dry coconut pieces and roast fry
it for 3 minutes till the aroma goes off and change its color then switch off
the flame and transfer them into a plate and allow it to cool.
Step 3: Take a mixer
and add roasted dry chilli, Bengal gram, coriander seeds, dry coconut pieces,
ginger piece, garlic cloves and add tamarind pulp grind it very well together
by adding very little amount of water and prepare a thick and smooth powder.
Step 4: Take a pan
pour oil add cumin seeds fry it for 2 seconds and add chopped brinjal and
required amount of salt as per taste and cook it for about 5 minutes.
Step 5: Now add
prepared paste, coriander seeds powder and add grated coriander cook it for
about 15 minutes in medium flam after that switch off the flame.
Step 6: Try and serve
