Brinjal with Eggs Curry

Ingredients:
  • ·         Brinjals – 1/2 kg
  • ·         Onions – 3
  • ·         Green chillies – 4
  • ·         Tamarind pulp – 1/2 cup
  • ·         Red chilli powder – 2 tablespoons
  • ·         Garam Masala – 2 tablespoons 
  • ·         Eggs – 4
  • ·         Chopped Coriander – 1/2 cup
  • ·         Salt to taste
  • ·         Oil as required
  • ·         Water as needed
  • ·         Turmeric powder – 1/2 tablespoon

Procedure to Prepare Brinjal with Eggs Curry Recipe:  

Step 1: Chop the brinjals, onions and green chillies in medium size.

Step 2: Take pan pour water add eggs and boil it for about 20 minutes. Then peeled the boiled eggs and keep it aside.

Step 3: Take frying pan pour oil, add pinch of turmeric powder and hard boiled and peeled eggs fry it 5 minutes in small flame until the eggs gets the light golden color then heat off and keep it a side.

Step 4: Take another frying pan add chopped onions and chopped chillies fry it for 5 minutes in normal flame.

Step 6: Now add red chilli powder and garam masala mix it well together all the ingredients.

Step 7: Add water as needed quantity cook it 2 minutes after that add tamarind pulp fry it 5 minutes and add chopped coriander sauté  it 1 minute after that switch off the flame.
