Cashew nuts and carrot pickle
Ingredients:
    Cashew Nuts and Carrot Ingredients
  • ·        Chopped Carrot – 2 cups
  • ·        Cashew nuts – 1 cup
  • ·        Lemon juice – ½ cup
  • ·        Red chilli powder – ½ cup
  • ·        Sesame Oil – 1 cup
  • ·        Mustard powder – ½ cup
  • ·        Fenugreek Powder – ¼ cup
  • ·        Turmeric powder – 1 tablespoon
  • ·        Garlic – 10
Seasoning ingredients:
  • ·        Oil as required for seasoning
  • ·        Mustard seeds – 1 tablespoon
  • ·        Cumin seeds – 1 tablespoon
  • ·        Red chilli Pieces – 1 or 2 tablespoons
  • ·        Curry leaves – 3 tablespoons
  • ·         Asafoetida powder – ¼ tablespoon

Procedure to prepare carrot and cashew nuts pickle:
    Cashew nuts and carrot pickle recipe
  • Step 1: First dry the chopped carrot.
  • Step 2: Take a bowl and add the chopped carrot, cashew nuts, Red chilli powder, mustard powder, fenugreek powder, and garlic mix it well.
  • Step 3: Now add the sesame oil and mix it.
  • Step4: Finally add the lemon juice and mix all the ingredients together.  
  • Step 5: Now take this pickle in another container and close it with lid and keep it aside for three days.
  • Step 6: Twice a day we have to mix it.
  • Step 7:  Now seasoning it.
  • Step 8: Take a pan and add oil mustard seeds, cumin seeds and red chilli pieces fry it until crackle this.
  • Step 9: Then add curry leaves and pinch of Asafoetida powder and add the preserved pickle mix it well
  • Step 10: Take this pickle in dry glass jar to store this pickle.
  • Step 11: Enjoy this pickle with rice or curd rice or dosa or idly.
