Procedure to Prepare Stuffed Brinjal Fry:
Step 1: Firstly wash brinjals and slit them
diagonally with the stalks intact. And wash the brinjals with salt water.
Step 2: Take a
frying pan pour oil; add brinjals fry it in medium flame until the color changes
after that switch off the flame. Set it aside.
Step 3: Take a bowl
add cumin powder, grated coconut, Bengal gram flour, chopped coriander, red
chilli powder and add salt to taste mix it very well together all ingredients
add some water to prepare a thick paste.
Step 4: Take a heavy bottomed vessel pour oil for deep frying then dip the fried
brinjals in prepared batter and drop the dipped brinjals
into the hot oil fry it both sides till it gets golden color.
Step 5: Take them out into a slotted spoon and transfer it to absorbent paper to
remove the excess oil.
Step 6: Try and serve this recipe as a side dish along with sambar and cooked rice.
