Procedure to Prepare Brinjal with Potato Curry:

Step 1: Firstly chop brinjals, onions and potatoes finely slit the green chilli and set it aside.

Step 2: Take a pan pour oil; add chopped onions and green chili fry it till the golden brown color appears.

Step 3: Add potatoes and brinjals cook it for about 10 minutes

Brinjal With Potato Curry RecipeStep 4: Now add tomato pulp and salt as per taste sauté it 5 minutes then add red chili powder mix it well and cook it 3 minutes.

Step 5: Finally add chopped coriander and water mix it well and sauté it till the curry becomes thick gravy after that switch of the flame.   

Step 6:  Serve this tasty Brinjal with potato curry along the chapathi, paratha, roti and cooked rice.
