Procedure to Prepare Stuffed Brinjal
Curry:
Step 1: Firstly wash
the brinjals and slit them diagonally with the stalks intact. Soak it in salt
water and set aside.
Step 2: Take a pan dry
roast the black gram, Bengal gram, dry chilli and chopped coriander fry till it
changes the color. And transfer into a bowl and set aside.
Step 3: Take a mixer
add coconut chunks, ginger piece, salt to taste and also add fried ingredients
mix it well and prepare thick paste to add some water.
Step 4: Stuff the
grind masala inside the brinjals do the same thing to all brinjals.
Step 5: Heat oil in
a pan and add stuffed brinjals fry it both sides in medium flame till it gets
golden color.
Step 6: Transfer the
curry into a serving bowl. Serve this recipe along with cooked rice or as a
side dish.
