Procedure to Prepare Coriander with Brinjal Curry Recipe:

Coriander with Brinjal Curry Recipe IngredientsStep 1: Firstly wash the brinjals and slit them diagonally with the stalks intact and set aside.

Step 2: And add chopped brinjal into salted water to prevent discoloring.

Coriander with Brinjal Curry RecipeStep 3: Wash the ginger piece and green chilli well and peel off the ginger piece and chop the ginger piece and green chilli into medium size and set aside. Take a mixer add chopped ginger, green chilli, coriander, garlic cloves, red chilli powder and add required amount of salt as per taste then mix them very well and prepare fine paste by adding very little amount of water then transfer the prepared paste into a bowl and set aside.

Step 4: Now stuff the prepared spices mixture to the brinjals and set aside.

Step 5: Take a pan pour oil drop the stuffed brinjal fry it both sides till it gets golden color after that switch off the heat.
