Chicken Dum Biryani

Ingredients:
    Dum Biryani Ingredients
  • ·         Chicken – 250 grams
  • ·         Onion – 1
  • ·         Green chilli – 4
  • ·         Clove – 10
  • ·         Cardamom – 10
  • ·         Cinnamon sticks – 4
  • ·         Curd – 1 cup
  • ·         Mint – 1 cups
  • ·         Coriander  – 1 cups 
  • ·         Basmati rice – 3 cups
  • ·         Lemon – 1
  • ·         Ginger garlic paste – 4 tablespoons
  • ·         Salt to taste
  • ·         Oil as required 
  • ·         Chicken masala powder – 2 tablespoons 
  • ·         Water as required
  • ·         Red chilli powder – 3 tablespoons 
 Procedure to prepare Chicken Dum Biryani:

  • Step 1: Firstly clean the chicken and wash it well and drain the water. Wash and soak the rice for about 1 hour.
  • Step 2: Chop the coriander, mint, onion and green chillies then keep it in aside.    
  • Step 3: Take a mixer add cinnamon, clove and cardamom and make a powder these ingredients.
  • Step 4: Now take a bowl and add chicken, prepared powder 2 tablespoons, 1/2 cup coriander, 1/2 cup mint, and red chili powder 3 tablespoons, 1 tablespoon lemon juice, curd and salt as per taste then marinate it for about 1 hour.
  • Step 5: Take a cooker and pour 3 cups of water, add 3 cups of soaked basmati rice and 1/2 cup mint, 1/2 cup coriander, salt as per taste and prepared powder 2 tablespoons mix it well and cover the cooker with lid and cook it for 3 whistles.
  • Step 6: Take a pot pour oil add chopped onions, green chillies fry it for 1 minute and add bay leaf fry it 2 seconds.
  • Step 7: Add ginger garlic paste fry it until the raw aroma goes off.
  • Step 8: Then add marinate chicken fry it 15 minutes in medium flame.
  • Step 9: Now add cooked rice and chicken masala powder mix well and cook it for about 20 minutes in medium flame then switch of the flame.   
  • Step 10: The important aspect of making a proper dum biryani is cook it on dum with a proper cover or lid
  • Step 11: Cover the pot with aluminium foil and keep the pot on the hot griddle on low flame for 15 minutes until it gets ready.      
  • Step 12: Now try and serve this delicious spicy chicken dum biryani with yogurt raita.
