Instructions to prepare Bitter Gourd Pickle:
Step 1: Firstly wash the bitter gourd and wipe off with an absorbent cloth and chop
into round shape set aside.
Step 2: Dry fry the mustard for about 5 minutes in normal flame and set aside in
the same pan roast the fenugreek till the aroma goes off and change the colour then
keep aside.
Step 3: Take a pan pour oil add sliced bitter gourd fry till it turns the golden brown then transfer into a bowl keep aside.
Step 4: Take another pan add tamarind pulp and 2 cups of water cook till it
become a thick paste.
Step 5: Now take a mixer add dry roasted mustard and fenugreek grind it well and
prepare a fine powder transfer the powder into a bowl. Set aside.
Step 6: Meanwhile take the garlic cloves
and remove the peel.
Step 7: Take a large bowl add fried bitter gourd cubes, chilli powder, garlic
cloves, prepared mustard and fenugreek powder mix it well then add boiled
tamarind pulp and required quantity of salt as per taste, pour oil and mix it well.
(If needed add some more oil to shirk the pickle to avoid the fungus)
Step 8: Store this pickle mixture in a sterilized glass jar store this in a
clean jar.
Step 9: Serve this pickle along with dosa, idli, paratha and cooked rice or curd
rice.
